These Baked Banana Oatmeal Cups are really easy to bake, and possibly healthy? Just 15 minutes to prep, and 25 minutes to bake, and you’re feeding your family the good stuff!

Here’s what you need to make these:

1 ¼ cups old fashioned oats

1 tsp baking powder

½ tsp ground cinnamon

¼ tsp salt

1 cup mashed bananas

¾ cup milk (I used Almond milk)

¼ cup organic honey

1 large egg

1 tsp pure vanilla extract

Here’s How:

1. Preheat oven to 350°. Spray each cavity of a muffin tin with cooking spray and set aside.

2. In a large mixing bowl mix together dry ingredients: old fashioned oats, baking powder, ground cinnamon, and salt.

3. In a separate large mixing bowl, whisk together the wet ingredients: mashed bananas, milk, honey, egg, and vanilla extract.

4. Add the dry ingredients to the wet ingredients, a little bit at a time. Mix until well combined.

5. Evenly pour mixture into the 12 muffin tin cavities. Bake at 350° for 22-25 minutes, or until the tops of the muffins are firm.

6. Remove from oven and allow to cool before transferring to a wire rack.

Enjoy immediately, or store in airtight container for up to one week in the refrigerator.

I once won a cubicle decorating contest with a Stranger Things theme. I found wrapping paper that closely resembled 1980s era wallpaper and wood-paneling and stapled them to my cubicle walls to replicate the Byers’ living room.
